Simple, easy 4 ingredient recipe to satisfy your pumpkin spice craving all season long!
Trust me, you’re going to want to save this pumpkin spice chocolate chip muffin recipe and try it immediately. It’s that good, that quick and that simple.
With only 4 ingredients necessary for this recipe, you’ll be enjoying the delicious aroma of these muffins baking in no time.
Here’s what you need:
1 white or yellow cake mix (You can substitute with a spice cake mix)
1 can 100% pumpkin puree (Not pumpkin pie filling)
2 tablespoons pumpkin pie spice
Chocolate Chips (I prefer dark or semi-sweet chips)
Mini muffin pan (You can use a standard size, too)
Baking spray
What you’ll do:
Preheat your oven to 350 degrees.
While the oven is heating, use a large mixing bowl to combine the cake mix with the pumpkin puree. You do not need to add any ingredients the cake mix box calls for.
After the cake mix and pumpkin puree are well combined, meaning there are no clumps left, add 2 tablespoons of pumpkin pie spice. If you’re using a spice cake mix, you do not need to do this step.
Next fold in the chocolate chips. I measure by the heart, but 1 to 1.5 cups is a good ballpark amount.
Once all the ingredients are incorporated, scoop ~ 1 tablespoon into a pre-greased mini muffin pan. I use the baking cooking spray to grease the pan. You can also use a full size muffin pan, if that is your preference.
Place in the oven for about 15 minutes. Check they’re ready by poking a few muffins with a toothpick. If the toothpick comes out clean, without cake on it, they’re good to go.

This recipe, if using a mini muffin pan, will yield around 24 muffins. I definitely believe this recipe could take on other ingredients, like a pecan or walnut, maybe a cranberry or golden raisin, or even white chocolate chips.
